This vibrant and fresh Carrot-Ribbon & Berry Salad will have everyone eating their fruits and veggies this summer!
Using a vegetable peeler, slice carrots into thin ribbons. Place carrots, berries, almonds, and mint in a large serving bowl.
For the dressing, in a small bowl, whisk together oil, vinegar, salt, and pepper.
Just before serving, toss dressing with carrot and berry mixture.
