Description

This can be used as a salad dressing or topping for cooked fish or chicken. It has a fresh and light taste.

Ingredients

  • 1 cup Fresh Blueberries
  • ½ cups Red Wine Vinegar
  • ¼ cups Fresh Parsley
  • 2 Tablespoons Sugar
  • 1 teaspoon Fresh Chopped Rosemary
  • 1 teaspoon Hard Grain Mustard ( Brown Or Dijion Can Be Substituted)
  • ½ teaspoons Garlic Powder
  • ½ cups Olive Oil
  • ¼ cups Water

Preparation

Using a stick blender (or stand blender), place all ingredients except oil and water. Blend until berries are blended and smooth.

Add water and mix using a wire whisk. While whisking, slowly drizzle olive oil into mixture until well-combined.

Transfer to airtight container and store in refrigerator until ready to use. Can be stored for up to 2 weeks under refrigeration.
