Spaghetti in a garlic, Parmesan olive oil sauce, baked with mozzarella.
For the garlic Parmesan oil:
Preheat oven to 400ºF. Place whole head of garlic in tin foil and drizzle with 1 tablespoon olive oil. Close up tin foil. Cook garlic for 1 hour. Let cool a little.
Cut top of head of garlic horizontally. Squeeze out softened garlic. Add to skillet with 1 tablespoon oil and Parmesan. Cook for 1 minute and mix thoroughly.
For the spaghetti:
Reduce oven temperature to 325ºF.
In a skillet, add garlic Parmesan olive oil to cooked spaghetti. Mix well and heat through for 1–2 minutes. Top with grated Parmesan and olive oil.
Put shredded mozzarella in center of pasta. Spread out a little. Place on top rack of oven and bake until cheese melts and browns, about 5 minutes. Serve and enjoy!
