Description

This is a fun and easy way to add all of your favorite fixin’s into a baked potato. Great for a family meal or a party setting.

Ingredients

  • FOR THE POTATOES:
  • 6 whole Potatoes
  • 2 Tablespoons Butter
  • 8 slices Bacon
  • 4 heads Broccoli
  • 4 stalks Green Onion
  • 1 cup Shredded Cheese
  • 1 cup Sour Cream
  • FOR THE CHEESE SAUCE:
  • 2 Tablespoons Butter
  • 2 Tablespoons Flour
  • 1 cup Milk
  • 1-½ cup Shredded Cheese
  • Salt And Pepper, to taste

Preparation

1. Preheat oven to 350 F. Wash the potatoes and prick them several times with a fork then place each on a large square of aluminum foil (big enough to wrap them up). Add a teaspoon of butter on each and wrap with foil. Place in the oven and bake at 350 F for 1 hour, or until soft.
2. While potatoes are baking, prepare broccoli and bacon.
3. Microwave bacon between two paper towels on a microwave safe dish for 5 minutes. Cool and crumble.
4. Steam broccoli heads for about 7 minutes or until bright green and tender.
5. Then make the homemade cheese sauce as follows:
6. Melt butter in a saucepan over medium heat.
7. Add flour then whisk for one minute.
8. Slowly whisk in milk then season with salt and pepper.
9. Stir and cook until thickened, about 4-5 minutes.
10. Remove from heat, then add cheese and stir until melted and smooth.
11. Season with additional salt and pepper if necessary. Serve immediately on top over potatoes. Add your favorite fixin’s including cheese, sour cream and chopped green onions, broccoli and bacon!
