Description

Discover my simple 3-step Greek yogurt chicken! Impress your friends at a barbecue or make your family drop their jaws at dinner. A guaranteed success!

Ingredients

  • 1 cup Plain Greek Yogurt
  • 2 Tablespoons Olive Oil
  • 2 cloves Minced Garlic
  • ½ Tablespoons Dried Oregano
  • ½ Tablespoons Salt
  • Freshly Cracked Pepper
  • 1  Lemon (zest And Some Of The Juice)
  • ¼ bunches Fresh Parsley
  • 4 pounds Chicken Pieces (I Used Drumsticks But You Can Use Any Type Of Chicken)

Preparation

1. First make the marinade. Mix the Greek yogurt, olive oil, minced garlic, oregano, salt and some freshly cracked pepper in a bowl. Scrape the thin layer of yellow zest from the lemon skin into the same bowl (you can use a fine cheese grater or a zester). Also add about 1-2 tablespoons of juice from the lemon. Stir until the ingredients are well combined. Roughly chop the parsley and stir it into the marinade. Now your marinade is finished.

2. Add the chicken pieces and marinade into a gallon-sized zip top bag. You can use any type of chicken. I used drumsticks. Remove as much air as possible (so you can mix the ingredients easily), close the bag tightly and massage the bag to mix the contents and make sure the chicken is well coated. This will also make the chicken meat extra tender. Refrigerate the bag and let it sit there for about 30 minutes.

3. After marinating for 30 minutes, heat your grill to medium heat or preheat the oven to 375 F. Remove chicken from the marinade. Cook the chicken on the grill (great for summer evenings) or in the oven. To bake the chicken, place the chicken pieces in a large casserole dish. Cook the chicken for 45-60 minutes or until it reaches an internal temperature of 165 F. When you open the oven the chicken will be be golden brown on top and the amazing smell will make your mouth water.

4. Now it’s time to eat and enjoy your Greek yogurt chicken!

The family loved it and so did I. Easy and tasty, perfect in the oven. I added extra lemon juice and it came out perfectly zesty.

This was really terrific! I used boneless skinless chicken thighs and they were moist and absolutely delicious! I served the chicken with a Greek salad and couscous – it was a wonderful meal. Thanks for this great recipe – I’ll make it often.
