A delicious and fresh twist on a summer favourite: grilled salmon!
Heat grill to medium heat.
Combine all of the ingredients in a bowl, except for the salmon.
Spray a large sheet of heavy-duty tin foil with cooking spray. Place the tin foil on the grill, and transfer the fish onto the tin foil, flesh side down. Grill for 5 minutes. Flip the fish over, and spoon the bruschetta mixture onto the fillets. Grill 18 – 20 minutes or until the fish flakes easily with a fork.
