It’s my favorite salad ever.
Chop the tomatoes and onions. Put them with the garlic in a baking dish. Add the olive oil, ground black pepper, thyme, and rosemary. Mix well. Bake for 35 to 45 minutes at 200ºC or 400ºF.
While tomatoes are still hot, add the salt, balsamic vinegar, parsley and mix well. Put the tomatoes over a bed of arugula and serve immediately.
