Love me some fajitas!

Ingredients

  • 1-½ teaspoon Chili Powder
  • 1-¼ teaspoon Ground Cumin
  • ¼ teaspoons Cayenne Pepper
  • ½ teaspoons Onion Powder
  • ½ teaspoons Garlic Powder
  • ¼ teaspoons Adobo Powder
  • Kosher Salt And Freshly Ground Pepper, To Taste
  • 2 Tablespoons Olive Oil, Divided
  • 2 Tablespoons Fresh Lime Juice
  • 6  Boneless, Skinless Chicken Breasts
  • 1  Large Vidalia Onions, Quartered And Thinly Sliced Crosswise
  • 1  Large Red Bell Pepper, Cored, Seeded, And Cut Into Strips
  • 3 cloves Garlic, Smashed And Minced

Preparation

Heat you grill to 350 F.

Mix the chili powder, cumin, cayenne, onion powder, garlic powder, adobo powder, salt and pepper in a small mixing bowl. Add half of the olive oil and half of the lime juice into the bowl and mix to make a paste. Rub the chicken on both sides with the spice rub.

Put the chicken onto the hot grill. Grill the chicken until cooked through flipping once. Cook time should be about 4-5 minutes per side depending on the thickness of your chicken breast. When done remove them from the grill to a clean plate. Cover loosely with foil, and keep warm

Meanwhile, heat the remaining half of the oil in a large skillet over medium-high heat. Add the onion, bell pepper, and 1/2 teaspoon each of salt and pepper. Cook, stirring occasionally, just until the vegetables begin to soften, 3 to 4 minutes. Stir in the garlic. Stir in the remaining half of the lime juice. Transfer to a bowl, cover loosely with foil, and keep warm.

Serve the chicken alongside the peppers and onions. You can serve them with your favorite Mexican rice dish or slice chicken and serve in warm tortillas.
