One of my favorite meals growing up was my Mom’s pizza casserole. Here is my version of one of my childhood favorites. I hope you like it!
1. In a medium bowl, whisk together the tomato sauce, tomato paste, Italian seasoning and garlic powder. Set aside.
2. In a large saute pan with lid, cook sausage over medium heat until cooked through and brown. Drain grease if desired. Add in red pepper and cook until softened. Add in the tomato sauce mixture, cover pan and reduce to a simmer while you cook the pasta. In a pot of salted water cook the pasta according to package directions. Drain and set aside.
3. Preheat oven to 375 F
4. In a lightly greased 9x13x3 inch pan, pour a small amount of sauce to lightly coat the bottom.
5. Then add the first layer of ingredients in the following order: half of the pasta, half of the remaining sauce, half of the shredded mozzarella cheese and half of the Parmesan cheese. Then cover it with sliced pepperoni.
6. Then add the second layer of ingredients in the following order: remaining pasta, remaining sauce, remaining mozzarella cheese, remaining Parmesan, and then top with sliced pepperoni
7. Place casserole in oven and bake for 40 minutes. Remove from oven. Let it set up for 10 minutes before serving.
