This delicious Chinese-inspired dish is a regular in our dinner rotation. Adding it to yours is sure to be a family-pleaser.
In a large skillet over medium heat, heat half of the olive oil. Add onion and garlic. Sauté until onion is translucent. Add veggies and sauté until tender. Remove from skillet and set aside.
In the same skillet heat the remaining oil and add chicken. Cook until brown on all sides and cooked through, about 8 minutes.
Meanwhile, in a small saucepan bring all sauce ingredients to a low boil then reduce heat. Simmer for about 3-4 minutes until thickened.
Once chicken is cooked through add veggies into the skillet. Pour sauce over chicken mixture and stir to coat. Serve over cooked rice.
