Stuffed shells—an easy weekday meal with a variety of filling options. This beef and feta filling is the best I’ve tried so far!
Add onions, garlic and beef into a saucepan and cook on medium heat until beef is browned. Drain grease if necessary.
Mix in 1 cup of the feta cheese and 1/2 cup of the spaghetti sauce and heat on low.
Boil a pot of water, and cook shells according to package instructions. Drain and place on piece of wax paper to cool.
Preheat oven to 350 F. Spoon some sauce on the bottom of a baking pan (big enough to fit all of the shells).
When cool enough to handle, spoon filling inside each shell and place each shell into the pan, filling side down.
Top with remaining sauce and sprinkle with the remaining 1/2 cup feta cheese. Cover with a sheet of foil. Cook, covered for about 20 minutes. At that point you can remove the foil and cook uncovered for an additional 10 minutes if desired.
Spoon onto serving plates, serve with warm bread if desired and enjoy! You have dinner.
