A delicious Dorito-topped Mexican casserole.
Preheat oven to 350 F.
In a large skillet over medium heat, brown beef with onion and garlic. Drain off any excess grease before stirring in beans and chili powder, if using.
In a small bowl, stir together Rotel and cream of chicken soup.
Crush your unopened back of Doritos. Open the bag and dump half on the bottom of a 9×13 casserole dish. Layer half of the beef and bean mixture over that then layer on half the soup mixture and 1 cup of Mexican cheese. Next, layer remaining beef and bean mixture, remaining soup mixture, 1 cup of cheese and the rest of the Dorito crumbs.
Bake for 30-35 minutes until hot all the way through.
