Pumpkin, chorizo and goat cheese. It was a great combo in a pasta dish, so why not put in on a pizza.
Start by making the pizza dough. Combine flour, salt, oregano and yeast and mix. Combine water with the oil. Make a well in the center of the flour and pour in the liquid. Mixing by hand takes about 10 minutes, in a stand mixer with a dough hook it takes about 5 minutes. Be careful not to overwork the dough. Roll out as thinly as you can and transfer to the sheet you will be baking it on. Cover with oiled clingfilm and leave to proof for 30-40 minutes.
Prick the dough with a fork. And start adding everything. Spread the pumpkin puree on the pizza and add the chorizo and bacon. Slice your mozerella and crumble the goat cheese and add it to the pizza. Season with salt and pepper and drizzle with a litlle oil.
Before serving, brush the sides of the pizza with some garlic oil.
Pizza dough recipe slightly addapted from Lorraine Pascale’s Baking Made Easy.
