This looks really delicious and I’m glad to see some game meat on here!
Tender, tangy venison burgers made in the Swedish fashion (but without all those pickled beets!)
In a large bowl combine the first 8 ingredients (venison through bread crumbs) by hand, until thoroughly combined. Form into 4 large patties. Cover and let them stand until ready to use.
Preheat a grill to medium-high heat. Once it’s hot add the patties. Grill them for 6-10 minutes on each side, or until cooked to your preferred temperature.
Serve patties on top of a bed of arugula, topped with goat cheese, pomegranate arils and black pepper.
