Great for an easy weeknight meal!
Bring a large pot of water to a boil, salt water and add pasta. Cook until al dente, about 12 minutes. Drain pasta, keeping 3/4 cup of the cooking water to use for later. Pour drained pasta back into cooking pot and set aside.
Meanwhile, in large heated skillet add olive oil, followed by mushrooms and shallots. Season with salt and pepper. Saute until tender, about 10 minutes.
Cook chicken either on the stove top or in the oven. When done, give it a rough chop.
Combine the cooked pasta, pesto sauce, mushroom mixture, chopped chicken and the pasta water. Mix well, adding Parmesan cheese at the end.
