Description

An incredibly delicious pairing of goat cheese, honey and roasted cherries, in a delicious sandwich!

Ingredients

  • 1 cup Cherries, Pitted
  • 1 Tablespoon Brown Sugar
  • Salt
  • 1 Tablespoon Unsalted Butter
  • 4 slices Light Whole Wheat Bread
  • 4 ounces, weight Soft Goat Cheese
  • Honey For Drizzling

Preparation

Preheat oven to 400ºF. Grease a baking dish with nonstick cooking spray. Pour cherries into the prepared baking dish. Sprinkle with brown sugar and a dash of salt. Roast for about 10 minutes. Using a spatula, carefully move the cherries and sugar around (to prevent burning) and roast another 8 minutes longer. Remove from oven and let cool. Once cooled slightly, slice cherries in half.

Meanwhile, spread butter onto each side of the bread. Then, carefully slather 2 ounces of goat cheese onto the un-buttered side of the bread. Top the goat cheese with about 1/4 – 1/3 cup cherry slices (as many as you’d like, really). Drizzle the cherry slices with honey and place the second piece of bread over it.

Heat a nonstick pan over medium high heat. Place the sandwiches down, buttered side down. Cook until golden brown on each side and cheese is melted and gooey, about 3–4 minutes on each side.

Remove from heat, drizzle with additional honey and enjoy!
