Description

The pork is grilled, then placed in a slow cooker with the sauce and kept warm until serving. This is a great way to serve pork chops for a crowd.

Ingredients

  • 7 pounds Bone-In Pork Chops (or Pork Rib Racks)
  • 1-½ teaspoon Seasoning Salt
  • 1-½ teaspoon Freshly Ground Black Pepper
  • FOR THE SAUCE:
  • 1 whole Small Onion, Diced
  • 1 clove Garlic, Minced
  • 1 Tablespoon Oil
  • 1 can (398ml Size) Tomato Sauce
  • ½ cups Ketchup
  • ¼ cups Brown Sugar
  • ¼ cups Apple Cider Vinegar
  • ¼ cups Molasses
  • 1 teaspoon Dry Mustard
  • 1 teaspoon Worcestershire Sauce
  • 1 teaspoon Hot Pepper Sauce Or 1/4 Teaspoon Cayenne Pepper
  • ½ teaspoons Liquid Smoke

Preparation

Season chops with salt and pepper. Grill over medium-low heat for 35-40 minutes until done. Add 10 minutes for ribs.

For the sauce, saute onion and garlic in oil. Stir in remaining ingredients. Simmer together for 20 minutes, stirring often.

Place meat and sauce in a slow cooker on low 2–4 hours, or in a greased roaster. Cover and bake at 250ºF for 1–2 hours.
