Mellow, healthy, vegetarian, with a roasted garlic kick!
Preheat oven to 450 F.
While the oven heats up, cut the tips off the top of the garlic cloves then drizzle with a little olive oil. Wrap them in aluminum foil then bake until browned and soft, about 20 minutes.
Spread hummus evenly on one side of both slices of bread. Carefully remove garlic cloves from the aluminum foil and smash them out of their peels onto one side of the bread.
Top with cauliflower, carrots, red onion and lettuce and enjoy!
