Description

A classic family comfort food that my Mom grew up on. This dish is very versatile. You can omit the sausage, or substitute shrimp, ground beef, turkey, or pork.

Ingredients

  • 8 ounces, weight Macaroni, Or Any Bite Sized Pasta
  • 1 teaspoon Olive Oil
  • 1 whole Medium Sized Onion, Diced
  • 2 cloves Garlic, Minced
  • 8 ounces, weight "loose" Italian Sausage
  • 1 can Diced Tomatoes (28 Oz Can)
  • 2 teaspoons Italian Seasoning
  • 4 ounces, weight Fresh Spinach
  • 1 pinch Salt And Pepper, to taste
  • 1 pinch Crushed Red Pepper, To Taste
  • Optional Garnish: Shredded Parmesan Or Romano Cheese

Preparation

Prepare the macaroni or pasta according to the package directions. Then drain the pasta, rinse it in cold water and set aside.

Heat the same pot over medium heat. Add oil to the pan, then add the onion and garlic and saute until they just begin to turn clear, about 2 minutes. Add the sausage and cook until sausage is browned, about 5 minutes. Add tomatoes and Italian seasoning, then simmer for about 10 minutes. Reduce heat to low. Fold in the spinach, and stir and heat until spinach is wilted. Taste, and season with salt, pepper, and crushed red pepper as needed. Add the macaroni, then serve. You can sprinkle on a little Parmesan or Romano cheese if you like.

I had fun cooking this recipe! I actually enjoyed my time in the kitchen. I chopped some celery & carrots and used turkey sausage. Closer to the end I added about 1-1/4tsp pesto. Dinner was a big hit. Thanks for the recipe!
