You can adjust this recipe according to the vegetables you have on hand. Add some pepperoni or ham and make a meal out of it. It is very versatile, light and delicious.
Prepare vegetables and cheese as directed and mix together in bowl.
Add cilantro and sugar. Add salt and pepper to taste.
When ready to serve, pour off any accumulated juice in the bowl and spray lightly with the balsamic vinaigrette spray.
* I use Roma Tomatoes if I don’t have fresh, home grown tomatoes. Roma’s are always flavorful, year-round.

I submitted this recipe. I had to list some of the ingredient quantities in an odd way because of the constraints of the system. Hopefully you won’t have any problems. You can see this recipe is very forgiving and you can adjust it to suit yourself and your family. Enjoy!
