Imagine fresh snow peas, mushrooms, sweet red pepper, yellow squash and broccoli teamed up together in my favorite cast-iron skillet literally swimming in a sea of whipping cream…
Heat whipping cream in a small saucepan over medium heat until warm. Set aside.
Saute vegetables in butter and oil in a large skillet over medium heat until almost crisp-tender. Add warm cream; cook over medium heat, stirring constantly, for 5 to 10 minutes or until slightly thickened.
Cook linguine according to package directions; drain well. Place on a large serving platter.
Top pasta with vegetable mixture and sprinkle with Parmesan cheese and pepper; tossing gently. Serve immediately.
