Ohhhh… A to die for simple and fresh salad with summer’s bounty of fresh tomatoes and my favorite fresh herb, basil.
This dish is a classic salad that we enjoyed in our travels through Italy. My husband and I found our senses transported back to this beautiful country as we enjoyed its amazingly simple but delicious freshness.
Select an attractive platter or individual serving salad plates and drizzle with a small amount of olive oil, salt, and pepper. Layer a slice of tomato, olive oil drizzled again and a bit of pepper and salt, then a mozarrella slice. Finally top with a whole basil leaf or roll the leaf and thin slice it adding the shreds to each plate or serving. Another light drizzle of olive oil and a splash of balsamic vinegar finishes the dish. M-mmmmm!
Note: The fresh Mozzarella is very important as is a quality extra virgin olive oil and balsamic vinegar. Feel free to adjust the amount of salt, pepper, balsamic and olive oil to taste.
Tip: I’ve recently substituted fig balsamic with delightful results!
