A beef dish that is sweetened with fruit chutney, apricot jam and raisins. Its a South African favourite.
Bobotie is pronounced “Buh-Boo-uh-Tea”
In a bowl, throw together the beef, chopped onion, raisins, almonds, chutney, jam, lemon juice, curry powder, turmeric and salt.
Soak the bread in 1/2 cup of milk. Once soaked, squeeze the excess milk out of the bread and add the bread to the mixture. Blend well with hands to mix ingredients together.
Pour 2 teaspoons of oil into a pan and add the meat mixture. Brown over medium heat and then transfer the mixture to a greased casserole dish. Pack firmly into the casserole dish.
Mix together the eggs, remaining 1/2 cup of milk and pour over the top of the meat mixture. The egg mixture should form a layer on top of the meat. Place the bay leaves on top of the egg mixture and bake in the oven at 350F until set – about 50 minutes.
Serve with a salad and fresh dinner rolls or sourdough bread.
