Description

This simple and classic salad is perfect during a summer night. Every time I make this I always get asked for the recipe and it could not be simpler to make. The bottom line is that the real secret of super-fresh food is that you don’t need to do a lot to it to make it delicious.

Ingredients

  • 10 ounces, weight Green Beans
  • 14 ounces, weight Red And Yellow Cherry Tomatoes
  • 2 stalks Green Onions
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Apple Cider Vinegar
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Sea Salt
  • 1 pinch Ground Pepper

Preparation

Prepare the vegetables by topping the tail head of the green beans by hand or by knife and then cutting them into 3 pieces (1 ½ inch pieces). Then blanch the green beans. To do this you put the green beans into boiling water for about 3 minutes and then throw them into a bowl filled with ice water; remove and let them dry.

Then cut the cherry tomatoes into halves and chop the green onions and set aside.

Make the dressing by combining Dijon mustard, apple cider, olive oil, salt and pepper.

Toss the cherry tomatoes and green onions in with the dressing; this can sit for a while.

Do not add the green beans until just before serving or they will discolor from the acid in the vinaigrette.

Do you mean apple cider vinegar in the ingredients? You mention the green beans discoloring from the acid in the vinaigrette, but there isn’t any vinegar. This looked tasty, so I was just wondering about the ingredients.

Is this supposed to be apple cider, or apple cider vinegar? I assume you meant vinegar?

This was so easy and the dressing puts it over the top! Delicious! I did NOT add 1 TB of salt though, i’m not sure if that is correct, but i only put in a pretty large pinch and it was fine. My Dijon is nice and spicy, and i used regular white vinegar because i didn’t have cider. I will definitely be making this again!

Terrific! I made this for a picnic, and my boyfriend and I loved the sweet-hot mustard dressing. I really wish someone would fix the apple cider vinegar typo, though!

I used one green onion because they were pretty large in the bunch I got. It is a little too oniony for me, but I am not a big raw onion eater, so I do think this is somewhat of a personal preference. I will probably cut it down a bit if I make again. Otherwise I am happy with it. And it has stored well for me- I have not noticed the green beans discoloring at all even after a couple days.
