This recipe only uses a few ingredients that you probably have in your pantry. So simple and delicious!
Preheat oven to 350ºF.
Thaw corn (if using frozen) by putting in the refrigerator overnight or put the corn in a colander and run cool water over it until thawed. If using canned corn, drain.
Cut potatoes into a large dice. Place in a medium pot and cover with cool, salted water. Boil until fork-tender; drain.
While potatoes are cooking, brown ground beef. Stir in the soup.
When potatoes are done, mash with butter and enough milk to reach desired consistency. Salt to taste.
Layer meat mixture, corn, then mashed potatoes in a casserole dish. Top with cheese.
Bake at 350ºF for 20–30 minutes, or until cheese is beginning to brown.
