Our friends the Jason’s introduced this to us when camping near the Grand Canyon. Delicious and easy coleslaw with some unusual ingredients (have people guess what the crunchy bits are!).
Toss first five ingredients together. Add grape nuts just before serving. TIP: if you want leftovers, add grape nuts only to the portion you are going to eat now, as they get soggy at some point.
* If your coleslaw is going to sit in the fridge for a while, I would go lighter on the dressing as the cabbage will “sweat” and the mixture will get very sloppy.
