A step above the ordinary Potato Salad. It will have a nice light flavor.
Boil the potatoes in water until fork tender; cool. Then peel and cube the potatoes into bite size pieces. Peel 2 hard boiled eggs, dice them and then mix into the potatoes. Reserve 1 egg to slice on top. Add pickles, olives, onion and celery.
Mix remaining ingredients (except paprika) in a seperate bowl, then toss the dressing in with the potatoes and mix to combine. Garnish with the remaining sliced egg and paprika.
