This pesto is so light, and healthy, but you’d never know it because it tastes so darn good! It’s great on pasta, over chicken, and would make a dipping sauce too!
Combine ingredients in food processor or blender, and blend until it makes a thick paste.
And that’s it! I like to make big batches of this and freeze for easy meal preparation. Just pull it out of the freezer an hour or so before you want to use it to let it thaw.
This is delicious over pasta or chicken, and even better with good Italian bread. Enjoy!

This is my go-to pesto sauce recipe now. I’ve made a couple batches, and it’s so versatile. I’ve even mixed it with a bit of mayo to make a burger spread, and the results were FANTASTIC.

This is so delicious! I had tons of spinach that needed to be used up and this was the perfect thing. Very easy to make (didn’t actually measure anything). I froze some, and used the rest as a dip while I waited for my pasta to cook!
