This is a wonderful fruit salad—not heavy, with fantastic flavor. Doesn’t involve marshmallows. Try it!
Separate oranges into slices, and cut each slice into quarters; place in a large bowl. Add apples, pineapple chunks and halved grapes. Combine pineapple juice, sugar, ginger, vanilla and almond extract. Pour over the fruit and toss. Cover and chill for 2 hours. Top with toasted coconut before serving, if desired.

Tried this at a group function and it was a hit! I love the little kick that the ginger gives and the almond flavor is genius! Bookmarking this page for sure!
