A delicious clash of cultures! Delicious served with or without the sausage!
Boil potatoes and dice (about 4 medium).
Cook sausages by adding a small amount of oil and 1 cup of water to large skillet, then gently fry until done. Remove from skillet.
Scrape skillet to remove any stuck on bits (save bits), then fry bacon in same skillet until crisp. Remove from skillet and lay on paper towels to soak up grease.
Saute onions and celery in bacon drippings until soft.
Add salt, sugar, pepper, dry mustard, water, and apple cider vinegar. Boil for 2 minutes.
Crumble bacon then add it, the scraped sausage bits, potatoes, and mayonnaise to the mixture. Heat slowly on top of the stove.
Remove to a separate bowl, arrange sausages on top, and serve.
OR, you may place entire mixture (minus sausages) in baking dish and bake in a 300 degree oven for 20 minutes.
