It takes only 20 minutes to pull together but tastes like it’s been simmering on the stove all day. It’s creamy, spicy, gluten-free, and can be vegan if you use vegetable broth! (Do check your red curry paste ingredients to make sure.) You can easily add chicken or shrimp or even tofu for a protein boost.
