Dottie on 7.15.2014

I like to grill marinated chicken breast in a basket – with asparagus spears, big slices of colorful bell peppers, red onions, summer squash on top. I cook the chicken on one side alone first, but when they’ve been flipped, and are half way done, i put the veggies on top. When the chicken is almost all done, I allow the veggies to drop to the bottom of the basket for a quick sear while the chicken finishes the last bit – it allows it all to be done at one time with crisp grilled veggies, all in one basket. Yum every time!
