Description

Quick, sweet, optionally spicy stir fry—scales up and down, accommodates veggies or tofu, and best with homemade peanut butter.

Ingredients

  • 1 pound Chicken, In Chunks
  • ¼ cups Soy Sauce
  • 2 Tablespoons Honey
  • 1 Tablespoon Lime Juice
  • 1 teaspoon Minced Garlic (approximately 1 Large Clove)
  • 1 Tablespoon Natural Peanut Butter (heaping Tablespoon Even Better)
  • ½ teaspoons Curry Powder
  • 1 teaspoon Sriracha (optional)

Preparation

Mix ingredients and marinate chicken for 2-3 hours.

Cook chicken in the sauce over medium-high heat for 7-8 minutes or until chicken is done. Reduce heat to medium-low and add precooked veggies if desired. Serve topped with sesame seeds.

To thicken sauce if needed: reduce heat to medium-low and add a cornstarch slurry (1 teaspoon cornstarch in 1 tablespoon water).

Substitutions: replace chicken with tofu; replace peanut butter with tahini or another nut butter; if using regular peanut butter (i.e. Skippy) instead of natural peanut butter, reduce honey by 1 tablespoon.

Loved this. So easy and delicious! I put the chicken in to marinate the night before so all I had to do was make the rice and cook it the following evening. I did throw in some frozen peas and broccoli pieces about halfway through cooking the chicken to make it more of a complete meal. Will definitely make it again!

This was the quickest and easiest dinner I have cooked in a long time. I loved it and so did my husband. I did not marinate the chicken – just threw it all together in about 15 minutes. I had same issue as irismagnolia but don’t know how to get more sauce except to maybe double those ingredients next time.

I made this tonight for dinner and it was delicious! My 2 boys ate it with no complaining so a definite winner in my book. I served it with short grain brown rice and broccoli. I used Jif peanut butter so I only used 1 TBSP of honey. It was almost a little too peanut buttery so next time I will use the regular amount of honey and cut back on the PB to see how that tastes.

My husband and I absolutely love trying new recipes, especially ones that involve different ingredients … and we have all of these around all the time! :~) The chicken’s cooking on the stove right now, and it smells great! Thanks for sharing.

I cooked this–great flavor, but by the time you cook it, there’s a very sticky, thick coating on the chicken but really no sauce left to coat the rice or noodles or whatever you use. I was surprised because there was a note about how to thicken the sauce if necessary–I kept re-reading the recipe to see if I had done something wrong. I hate cooking, so maybe somebody could give me an idea of how to stretch the sauce a bit more and thin it out? I can double the recipe of course, but it’s still on the thick side. But like I said, I really enjoyed the flavor and the ease and would like to try it again.

I made this tonight and knew from the first bite that it will be one of my new go-to recipes. I use low sodium soy sauce and didn’t have any problems with the dish being too salty or that it tastes like soy sauce (pursuant to the other comments). I love Sriracha and added a little extra and so there was plenty of heat. I added in steamed broccoli. There wasn’t a ton of extra sauce, but I found I didn’t need an excess because it was flavorful. I’ll likely double the recipe the next time I make it.

My family loved it but it got 4 stars because my husband thought it needed a little something more. He suggested I put bamboo shoots. I served it over the Thai Coconut Rice on this site.

Considering the simplicity of the recipe and the speed of making it (once the marinading time is done), this is a great recipe! I might have to use less Sriracha sauce next time – it was perfect for me and hubby, but a bit too much for the younger kids. The flavor combo worked for me without any adjustments! Yum!!
