Description

A super good spinach quiche that also has zucchini and three different kinds of cheese and is very easy to make.

Ingredients

  • 1 whole Deep Dish Pie Crust
  • ½ bags (10 Oz. Bag) Fresh Spinach, Chopped
  • 1 cup Zucchini, Grated And Squeezed Dry
  • ⅓ cups Feta Cheese
  • ½ cups Onion, Chopped
  • 1 teaspoon Crushed Garlic
  • ¼ cups Grated Parmesan Cheese
  • ½ cups Mozzarella Cheese
  • ½ cups Plain Yogurt
  • ½ cups Cream
  • 4 whole Eggs
  • 1 Tablespoon Flour
  • 1 teaspoon Salt
  • ¼ teaspoons Oregano
  • ¼ teaspoons Nutmeg

Preparation

Preheat oven to 425 degrees.

Mix together all ingredients except pie crust (obviously).

Bake pie crust for 7 minutes. Remove from oven and reduce heat to 325 degrees. Pour filling into crust. Bake 1 hour or until a knife inserted in the center comes out clean. Let cool and enjoy!

Made this as the vegetarian entree for Christmas dinner – simply outstanding. The zucchini gives it the perfect texture – not too custardy, not too heavy with cheese. I followed the recipe exactly and wouldn’t change one thing.

This is fantastic. It is definitely the best tasting spinach quiche I have made. It has a variety of flavors but nothing overwhelms anything else. Love it! Will certainly add it to my go to recipes. I used to not like spinach quiche too much because it was always kind of bland, but this one has changed my mind.

I note that I cooked mine for almost 90 minutes until it set. And I overdid the onions a bit, but still delicious.
