Description

Couscous salad with bell pepper, tofu and sweet corn.

Ingredients

  • ½ cups Water
  • ½ cups Couscous
  • ½ Tablespoons Sesame Oil
  • 2 Tablespoons Soy Sauce
  • 13 ounces, weight Firm Tofu (Preferably Fortified), Diced
  • 1 teaspoon Dried Smoked Paprika
  • ½ bunches Fresh Parsley, Stems Removed, Thinly Chopped
  • 3 Tablespoons Raisins, Thinly Sliced
  • 1 whole Large Red Bell Pepper, Diced
  • 3-½ ounces, weight Romaine Lettuce, Washed
  • 1 cup Sweet Corn
  • 2 whole Medium Tomatoes, Diced
  • ½ cups Walnut Halves, Crushed And Roasted

Preparation

Boil water for couscous and pour it into the bowl of couscous. Cover with a lid and let stand for 15 minutes, or until liquids are absorbed. Fluff up couscous with a fork.

Preheat a medium skillet and add sesame oil and soy sauce. Fry tofu for about 5–10 minutes until golden brown. Sprinkle smoked paprika on top and mix well.

Use a big salad bowl and mix all the ingredients and adjust taste before serving.
