Description

This hearty slow cooker soup has all the flavors of a taco and is so easy to make!

Ingredients

  • 1 whole Yellow Onion, Diced
  • 1 pound Lean Ground Turkey
  • ¾ teaspoons Kosher Salt
  • 2 teaspoons Chili Powder
  • 2 teaspoons Cumin
  • ½ teaspoons Garlic Powder
  • 1 Tablespoon Ranch Seasoning
  • 1 cup Frozen Corn, Defrosted
  • 15-½ ounces, weight Canned Black Beans, Rinsed And Drained
  • 4-½ ounces, weight Canned Diced Green Chiles
  • 10 ounces, weight Canned Diced Tomatoes With Green Chiles (I Used Rotel)
  • 14-½ ounces, weight Canned Diced Fire Roasted Tomatoes
  • 2 cups Low Sodium Chicken Broth
  • Optional: Shredded Cheese, Cilantro, Chopped Green Onions, Sour Cream, And Avocado For Toppings

Preparation

Heat a large skillet over medium high heat. When the skillet is hot spray it generously with cooking spray and add in the diced onion and ground turkey. Using a wooden spoon break up the turkey into crumbles. Brown the turkey and onion until the turkey is no longer pink (about 5 minutes).

Pour the turkey and onion mixture into the slow cooker. Add the remaining ingredients into the slow cooker except for the topping and stir everything together.

Set your slow cooker to low, cover it, and let it cook for 6-8 hours depending on how fast your slow cooker cooks.

Serve the soup topped with the cheese, cilantro, green onions, avocado, and sour cream, or other toppings of your choice.
