Description

Keep your skinny jeans around this holiday by eating this healthy soup!

Ingredients

  • 1 cup Red Lentils, Rinsed
  • 1 Tablespoon Olive Oil
  • 1 whole Onion, Chopped
  • 5 cloves Garlic, Minced
  • 1 Tablespoon Ginger, Minced
  • Salt And Pepper, to taste
  • 1 Tablespoon Cumin
  • ¼ teaspoons Cayenne Pepper
  • 1 can Fire Roasted Tomatoes
  • 1 whole Lemon, Juiced And Zested
  • 4 cups Vegetable Stock

Preparation

Rinse the lentils under water until clear. Heat oil in a medium pot and saute onions, garlic and ginger for about 5 minutes. Add salt and pepper. Add spices and stir for another minute. Add tomatoes, lemon juice and zest, lentils and vegetable stock. Cover and bring to a boil. Reduce heat to simmer for about 30 minutes, or until lentils are soft. Serve with crusty bread, chives and sour cream.

I made this last night as I was craving lentil soup and this recipe matched what I had in my cupboard. I added carrots, mushrooms, zucchini and some spicy turkey sausage. (Because of my additions I had to add more stock.) The base of this soup is delicious, the ginger and lemon really give it a nice flavor. Plus it was easy enough to do when I got off of work. Thanks for sharing!

Made this last night! it was wonderful. I used plain tomatoes and smoked paprika and made due with orange zest instead of lemon. I am going to make this all the time. It was a nice alternative to my usual brown lentil soups.
