Nothing like a pot of homemade soup when the weather is cool! This is healthy, easy and delicious!
In a large stock pot, cover turkey carcass with water and add garlic powder, oregano, salt and pepper. Bring to a boil on medium high heat. Lower heat to medium low and let simmer for about 1 hour.
Remove turkey carcass and discard. Add chopped vegetables to stock. Simmer, stirring occasionally, until vegetables are very tender, about 30–40 minutes. Add rice to broth and let simmer another 20–25 minutes or until rice is tender.
Serve with crackers or fresh bread. Enjoy!
