Description

This is the tastiest thing I have ever eaten! I love it! Fresh and light. Perfect!

Ingredients

  • 1 package (8 Oz. Package) Thin Soba Noodles
  • 2 cups Chicken, Shredded
  • 1 cup Carrot, Julienned
  • 1 cup Broccoli Slaw Mix
  • 1 whole Green Onion, Chopped
  • ¼ cups Salted Peanuts, Chopped Roughly
  • ½ cups Fresh Parsley, Chopped
  • _____
  • FOR THE DRESSING:
  • 2-½ Tablespoons Creamy Peanut Butter
  • 2 Tablespoons Rice Vinegar
  • 1 Tablespoon Vegetable Oil
  • 1 Tablespoon Honey
  • 4 Tablespoons Soy Sauce
  • ⅛ teaspoons Red Pepper Flakes
  • 1 clove Garlic, Minced
  • ½ whole Lime, Juiced

Preparation

Cook the noodles according to the directions. Once they are done, drain, rinse under cool water and set aside.

Cut or shred the chicken into bite-sized pieces and place into a bowl. Add in the carrots, broccoli slaw mix, and green onion. Mix up the dressing by whisking together all the ingredients. Adjust to your taste; if you want it hotter, add more red pepper flakes, or more lime, etc.

Pour the dressing over the salad and gently toss. Garnish with the chopped peanuts and parsley.

Put a pile of noodles on a plate then heap some salad on top!

Note: you could use cilantro in place of parsley if you like.

This made a great hot weather salad for dinner. I used a rotisserie chicken, substituted cilantro for the parsley because we love it so much, and added some sriracha chili sauce and sesame oil to the dressing. It would also be lovely with cold shrimp or thinly sliced leftover steak. Oh yeah, and we tossed a few of those canned chow mein noodles over the top for extra crunch. It was a nice addition.

I made this for dinner tonight. I tweaked it a little by leaving out the peanuts and using rice noodles instead of soba noodles. It was absolutely delicious, light but yet filling. I loved the freshness of it – definitely something I will be making again and again! Thanks so much:)

I’ve made this twice once for home it was the perfect summer dinner and once for a potluck and it was a hit! Really fresh and delicious slurpable noodles!

This was excellent for dinner last night! Made it as is, with maybe an extra pinch of red pepper flakes. Husband got cilantro and I got parsley. Really lovely – looking forward to the cold leftovers for lunch :)

Great salad for a hot day! I “messed” with it a little, since the noodles felt too warm, so I cooked some bean threads and added them to the salad. I also deleted the peanuts and peanut butter (can’t keep them in the house) and it was still excellent!
