Strawberry Quinoa Salad

Description
A fall salad inspired by California’s late strawberry season.
Ingredients
- 1 cup Cooked Quinoa
- 1 cup Strawberries Hulled And Chopped
- 3 ounces, weight Goat Cheese Crumbled
- 1 Tablespoon Basil, Chopped
- ½ cups Chopped Arugula
- ¼ cups Balsamic Vinegar
- ⅛ teaspoons Salt
- 2 Tablespoons Red Onions, Minced
- 2 Tablespoons Raw Honey
Preparation
In a bowl, add the quinoa, strawberries, goat cheese, basil, arugula and toss to combine. In a separate bowl, whisk together the balsamic vinegar, salt, onions and honey. Drizzle the balsamic mixture over the quinoa/strawberry mixture and toss to coat. Serve immediately.
