Description

This is a wonderful dressing for a fresh summer salad or a taco sald. It is also a perfect veggie dip. Don’t let the anchovy paste sway you from trying it. It does not have a fishy flavor at all but instead the anchovy evokes a nice nutty flavor.

Ingredients

  • 1 cup Mayonnaise
  • 1 cup Scallion, Chopped
  • 1 cup Basil, Fresh
  • ¼ cups Lemon Juice, Fresh
  • 2 cloves Garlic, Chopped
  • 2 teaspoons Anchovy Paste
  • 1 whole Avocado, Peeled And Chopped
  • 2 teaspoons Salt
  • 1 Tablespoon Black Pepper
  • 1 cup Sour Cream

Preparation

Place all the ingredients (except the sour cream) in a blender and blend until smooth. Add the sour cream and process just until blended. (If not using immediately, refrigerate the dressing until ready to serve.)
