Description

Summer in a bowl.

Ingredients

  • 1 whole Roma Tomato
  • ½ Tablespoons Extra Virgin Olive Oil
  • ⅛ teaspoons Garlic Powder
  • 1 pinch Sugar
  • Salt And Pepper
  • 1 cup Mixed Salad Greens
  • 1 ounce, weight Fresh Mozzarella, Torn
  • 1 teaspoon Minced Red Onion
  • ½ whole Avocado, Sliced

Preparation

1. Bring a pot of water to a boil. Make an “x” in the bottom of the tomato with a knife. Drop into the boiling water for 30 seconds. Remove and drop into a bowl of cold water. The skin should easily slide off.
2. Roughly chop the skinned tomato and drop into a food processor. Pulse with the olive oil, garlic powder, and a pinch of sugar. Season with salt and pepper. Set aside.
3. Toss the salad greens, mozzarella, and red onion in a bowl. Top with avocado slices and tomato dressing. Season with salt and pepper and enjoy!
