I made this recipe to serve one so it is super easy to adjust to feed however many people you’re cooking for. Or if it’s just you on a Saturday morning and you feel like whipping up a batch, that works too.
When I lived in LA, my favorite restaurant was Killer Shrimp, and the only thing they ever served was Killer Shrimp with bread, Killer Shrimp with rice or Killer Shrimp with pasta.
So you wanna know what Killer Shrimp was? Spicy, garlicky, Cajun-y broth filled with giant perfectly cooked shrimp. It was the broth that was magical! Dunking your bread in the broth was half the fun. I’ve adapted the recipe for mussels.
It’s just a hodgepodge of different recipes that I’ve read, plus a little bit of my own flair. I’m lucky enough to live with a gentleman who collects dried chillies like I collect cookie sheets. So, I already had the below fun chillies. You are more than welcome to substitute them with whatever dried chilli powder you have in your house, just taste often and add slowly!
The backyard burger just became even better with the addition of our secret weapon, the umami-laden fish sauce. It may sound weird, but once you’ve tried it, you’ll never make a burger again without fish sauce. Don’t worry, it won’t make your burgers “fishy” at all. It will merely add an extra savory element to heighten the taste of the burgers.
My kids and I had so much fun making these nourishing snacks. They were filled with pride to see them bake and even happier to eat them away! The muffins are made with wholesome ingredients and topped with homemade persimmon cream cheese and sprinkled with turbinado raw cane sugar. Trust me, these won’t last long!
