Description

This is a high protein, low carb breakfast that will fill you up. Easy to eat in the car.

Ingredients

  • 6 slices Ham
  • 6 whole Eggs
  • ¼ cups Evaporated Milk
  • ½ Tablespoons Dill
  • ¼ teaspoons Salt
  • ¼ teaspoons Ground Black Pepper
  • ½ cups Grated Cheddar Cheese
  • ¼ cups Minced Onion

Preparation

Preheat oven to 400ºF.

Spray a half-dozen muffin tin with cooking spray. Place one slice of ham in each muffin cup, leaving the edges hanging out.

Whisk eggs, milk, dill, salt, pepper, cheese, and onion together. Pour evenly into muffin cups. Fold any the edges of the ham over the top of the egg mixture.

Bake for aproximately 12-15 minutes until the egg is set. Remove from heat and serve.

Like most things these reheated O.K., but not as good as fresh. I found that it tasted fresher if I toasted an english muffin and sandwiched the egg in it with a little bit of honey mustard.

I’ve never had any leftover, but I’ll make some this morning and cool them in the fridge, then reheat them tonight and then I’ll let you know.

You can also simplify this by leaving out the seasonings and onion and milk. Simply line the cups with ham, break an egg into each cup, break the yolk with a fork, top with cheese and bake. I usually put these in the oven, shower, get dressed and then they are ready to come out.

I made these on Sunday and saved the rest for breakfast the rest of the week. 30 seconds in microwave and they are ready. Really good and I felt like I was eating a healthy breakfast all week.
