Description

These nachos, made on the BBQ grill were a big hit with everyone. I only wish that I’d made more!

Ingredients

  • 1 bag Tortilla Chips, 12 Ounce Bag
  • 1 pound Ground Beef, Cooked According To Taco Seasoning Mix (or Make It Yourself!)
  • 1 bag Taco Seasoning Mix, 1 Ounce Bag
  • 2 cups Cheese, Grated (Cheddar, Tex Mex, Etc)
  • 1 whole Jalapeno Peppers, Seeds And Membranes Removed, Finely Chopped
  • 1 whole Red Pepper Finely Chopped
  • 1 whole Green Pepper, Finely Chopped
  • ½ cups Salsa
  • 1 cup Lettuce, Shredded
  • 3 whole Green Onions, Finely Chopped
  • ½ cups Sour Cream
  • Optional Additional Nacho Toppings Of Choice

Preparation

Fire up the barbecue grill and get it to a nice medium heat. We’re not cooking anything here, just getting the chips warmed up and the cheese melted.

On a baking sheet, lay out a single layer of tortilla chips. I also made a smaller version in another dish for people who didn’t like jalapenos.

Add on your cheese, jalapeno, green and red peppers and cooked beef. Take a large piece of tin foil and cover the baking sheet, making sure that the foil is “tented” and gets lots of air flow in there. You don’t want all the cheese to melt onto the foil.

Place it on the BBQ grill for about 5-10 minutes, or until you start to hear the cheese sizzling. Take a quick peak if you need to, but be careful of any hot steam when you open the foil. When done to your liking, remove it from the grill, remove the foil and serve.

Spoon on salsa, then add shredded lettuce and green onions, followed by dollops of sour cream.

You could also add:
– Guacamole
– Black Beans
– Corn
– Cilantro
– Tomatoes
– Ground Turkey
– Refried Beans
– Avocado
– Olives
– Bacon
