Description

Quick and easy chicken recipe that could be served over pasta or alongside a salad.

Ingredients

  • 3 Tablespoons Olive Oil
  • 1 package (about 5 To 6 Pieces In A Package) Chicken Thighs
  • 2 cloves Garlic, Chopped
  • 2 Tablespoons Italian Seasoning
  • 1 can (14 Oz. Can) Diced Tomatoes
  • 1 whole Bay Leaf
  • Salt And Pepper

Preparation

Heat pan and pour in olive oil. When oil is hot, add the chicken, skin side down, for about 3 minutes.

Flip the chicken and add chopped garlic, salt and pepper, and Italian seasoning to the top of the chicken. Then add diced tomatoes and bay leaf. (Remember to remove the bay leaf before serving.)

Reduce to simmer for about 20 minutes or longer if the chicken juices do not run clear.

This could also be served over a plate of pasta or alongside a salad.

I made this tonight with chicken breasts — very savory and delicious! Great over brown rice. I would even add another can of tomatoes if you wanted more sauce to go right over plain pasta.

Next time I will cut the chicken breast into bite-sized pieces – the savory flavors didn’t make it all the way into the meat.

Highly recommended, though, for a quick and easy delicious dinner :)

This is so easy and so yummy! And in one pot – love it! I didn’t have diced tomatoes on hand so I used pasta sauce which worked great. Served with steamed veggies and some brown rice/quinoa mixture (don’t ask, I”m weird), this made a wonderfully simple, easy weekend meal.
Even my husband, who doesn’t often enthuse over food, commented on how good it was! Definitely making this again!
