This is my favorite white chili!!! It is so easy to make, and every time someone else tastes it, they immediately ask for the recipe. It’s almost embarrassing to tell people how easy it is to make! :)

To spice it up a little, I’ve used hot salsa or even cubed pepper jack cheese. I also add about 1/2 tsp. of cumin.

To make it even quicker and easier, you can use good quality canned chicken. Sometimes I skip the crock pot and just heat it up on the stove, too. It only takes a few minutes for the cheese to melt.
