A healthy white bean, chicken chili that is a big hit where ever I take it.
Sautee onion in olive oil for 3 – 5 minutes.
Add garlic, chicken and 1/2 teaspoon taco seasoning mix. Cook for about 5 minutes.
Stir in the remaining taco seasoning. Add water and bring to a boil. Add artichoke hearts, tomatoes and beans.
Simmer uncovered on medium for 10-15 minutes.
Serve with sour cream, grated cheese, cilantro and tortilla strips as a garnish.
