Description

A healthy white bean, chicken chili that is a big hit where ever I take it.

Ingredients

  • 1 Tablespoon Olive Oil
  • 1 cup Chopped Onion
  • 2 teaspoons Chopped Garlic
  • 1-¾ pound Chicken Tenders Or Breasts, Cut Into 1-inch Chunks
  • 1 cup Water
  • 1 package (1 Oz. Packet) Taco Seasoning
  • 1 can (13.75 Oz. Can) Artichoke Hearts, Drained And Cut Into Quarters.
  • 1 can (14.75 Oz. Can) Diced Tomatoes With Jalapenos (drained)
  • 2 cans (15 Oz. Can) White Beans, Drained And Rinsed

Preparation

Sautee onion in olive oil for 3 – 5 minutes.

Add garlic, chicken and 1/2 teaspoon taco seasoning mix. Cook for about 5 minutes.

Stir in the remaining taco seasoning. Add water and bring to a boil. Add artichoke hearts, tomatoes and beans.

Simmer uncovered on medium for 10-15 minutes.

Serve with sour cream, grated cheese, cilantro and tortilla strips as a garnish.
