Description

This is the recipe for my dad’s “famous” white sauce. My dad and I have been tweaking the recipe for years and have finally come up with the perfect combinations. Pour it on grilled or smoked chicken or top a spinach, corn and fried okra salad with it. It’s so good, it will change your life. Ok, maybe not change your life, but it will make your dinner awesome. Enjoy!

Ingredients

  • 2-¼ cups Mayonnaise
  • ½ cups Light Brown Sugar, Packed
  • ½ cups White Vinegar
  • 6 Tablespoons Worcestershire Sauce
  • 6 teaspoons Black Pepper
  • 6 teaspoons Salt
  • 1 cup Lemon Juice

Preparation

Mix all ingredients.

Don’t over mix mayonnaise, as it will break down.

Tweak recipe to your unique taste – want it sweeter? Add more brown sugar. Want it more tart? Add more vinegar. Want it more savory? Add more Worcestershire.

I use this sauce primarily on smoked chicken. I cook my chicken (usually breasts and thighs) on my “Big Green Egg,” but any grill or smoker will do. About 5 minutes before I take the chicken off the Egg (once it’s completely done), I dip each piece in the sauce and return it to the Egg. I also use the sauce as a “gravy” for the chicken once it’s plated.
