I think this recipe is the only reason my husband married me.
Heat large pan over medium heat. Add oil and saute onions and garlic for 3-5 minutes. Add vodka, cooking for 5 minutes, reducing by half. Add chicken stock and tomatoes. Simmer. In the meantime, stat a pot of water for your pasta. When that comes to a boil, add pasta. To your tomato sauce, add the cream and simmer, stirring frequently. Once your pasta is done, drain it and tear up the basil leaves and toss with the hot pasta. Add to the sauce and you’re done!
Note: the longer you simmer this sauce (before or after the cream is added), the thicker it will get.

I made this last night for dinner (2/16/10). It was very simple and very good. Hubby really like it and was even suggesting that next time I might add some grilled chicken or grilled shrimp to the mixture. It’s definately a keeper! Simple ingredients and simply good!
